Tsukasa Tokaji is the blacksmith of Tosa Tsukasa, he apprenticed under Tadayoshi Tokaji and learnt the traditional free forging techniques of Shikoku Island. These knives have a Ryobi or double bevel grind and are fine for left and right handed users.
Handmade knife in Shirogami #1 Steel, hand forged. San mai blade with iron sides, octagonal oak wood handle. Kuruochi finish for blade.
As with any carbon steel kitchen knife, clean and dry it immediately after use to avoid oxidation. A slight gray or blue patina is considered normal.
